I am a huge fan of burrito bowls but really have not been able to have them since starting keto, due to the high carbs in beans and rice. The hubby and I have been loving how similar cauliflower rice tastes to regular rice, so I thought I’d give it a whirl for dinner tonight! We LOVED it!
We started out with a layer of the mixed veggie cauliflower rice, 80/20 ground beef with some onions in it, and then topped it with habanero salsa, spicy guacamole, jalapeno slices, red onion, sour cream, and some salsa ranch dressing. Super hot and absolutely delicious 🙂 (low carb!!!)
