Another day- another recipe! I’ve made sweet potato tacos in the past, but this recipe doesn’t use ANY animal products whatsoever!
- Cooked sweet potatoes (I microwaved mine)
- 1 can black beans- rinsed and drained
- 2 cups cooked brown rice
- 1 small red onion- chopped
- 4 cloves of garlic- diced
- 1 tbsp olive oil
- Cayenne pepper/chili powder/cumin
Simmer garlic and onion in a pan on medium heat with 1 tbsp of olive oil until they start to become translucent. Add in black beans, 1 tsp cumin, 1 tsp cayenne pepper and 1 tsp chili powder. Cover and reduce to low heat until black beans become soft (about 10 minutes).
Cook rice according to the box and combine with the bean mixture. Add 1 tsp of cayenne pepper and chili powder (optional if you want it more spicy). Stuff cooked sweet potatoes with rice/bean mixture and add the toppings of your choice. Bon Appetit!
