Sweet Potato Chili- Vegetarian!

As I loaded up my groceries into the back of my truck this afternoon, freezing rain started pouring down on me and I thought “Yep, today’s a chili day.”

This recipe is super easy and absolutely delicious! Chili is one of my favorite meals and is so versatile. You can load it up with whatever your heart desires.

Ingredients:

  • 4 small sweet potatoes
  • 1 medium bell pepper
  • 1 medium yellow onion
  • 4-6 cloves of garlic
  • 1 can of kidney beans & pinto beans
  • 2 large cans of diced tomatoes
  • 1.5 cups of vegetable stock
  • 3 tsp cumin
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • red pepper flakes to taste
  • garnishes of your choice

Directions:Β 

Dice onion, garlic, and bell pepper. Cut sweet potatoes into smaller chunks. In a medium sized pot, combine all vegetables, beans, and tomatoes. Add in spices and vegetable stock and stir together. Cover and simmer for about 2-3 hours. Enjoy with your favorite chili toppings!

I topped mine with some shredded cheese, sour cream, scallions, and some more red pepper πŸ™‚ We like it spicy in this household!
