Ricotta Stuffed & Bacon Wrapped

What is better than cheese and bacon?! I saw a recipe similar to this while scrolling through Facebook this morning, and never really got it out of my head…so of course I made it for dinner this evening.

INGREDIENTS:

6 Chicken Thighs (boneless & skinless)

Bacon

1 cup of ricotta cheese

Parsley

Garlic powder/Italian seasoning/rosemary

DIRECTIONS:

Preheat oven to 350 degrees and spray a pan with non stick. Flatten out chicken thighs and sprinkle with garlic powder and Italian seasoning. Spread a somewhat equal amount of ricotta cheese on each chicken thigh. Add in a pinch of chopped parsley and roll up the chicken. Wrap each one with two slices of bacon and add a dash of rosemary to each one. Bake for about 45 minutes, broiling the last 3-4 to crisp up the bacon.
