Spicy Fall Crockpot Stew

Chilly day = comfort food cravings! I had found a recipe for a “clean eating” Jalapeno Popper Chili on another blog site. But as I prepared it I realized it was less of a chili and more of a stew, which was fine by me. So, as usual, I tweaked the recipe to fit our taste buds 🙂

INGREDIENTS:

1lb lean ground chicken

1lb lean ground turkey

1 14oz can diced tomatoes

1 jalapeno pepper

2 red bell peppers

1/2 white onion

1 large sweet potato

3 gloves garlic

1 1/3 cup of chicken broth

Garlic powder, cumin, red pepper flakes, and Italian seasoning to taste.

DIRECTIONS:

Mix ground chicken and ground turkey together and place in the greased crockpot. Sprinkle garlic seasoning on top. Pour can of diced tomatoes over meat. Dice the onion, jalapeno, sweet potato, garlic, and red peppers and place them over top. Add in chicken broth, and sprinkle preferred amount of seasonings on everything. Cover and cook on low for 8 hours, or high for 4 hours. We topped ours with avocado & soy Monterrey cheddar. Enjoy!

Might I add an honorable mention to the delicious garlic Hawaiian rolls that accompanied this meal 🙂
