Yesterday’s PSL sent me straight into a full blown pumpkin everything craze! I went right to the grocery store this morning and picked up the ingredients for my go-to recipe for pumpkin muffins. This may be the easiest muffin recipe I use!
All you need is 1 15 Oz can of pure pumpkin, 1 box of spice cake mix, 1/4 cup of oil, and some cinnamon to sprinkle over top.
Preheat the oven to 350 degrees and spray a mini muffin pan with nonstick. Mix together the cake mix, oil, and canned pumpkin until fully combined. Scoop spoonfuls of the mixture into the greased pan. Sprinkle the tops with cinnamon and bake until cooked through. (10-15 minutes)
