When there’s nothing else to do…cook! I haven’t whipped up a quiche in quite a while, and so I went rummaging through my fridge and picked out a bunch of things that sounded delicious. I made up the recipe as I went, so bare with me 🙂
- Crumbled goat cheese
- A handful of grape tomatoes sliced in thirds
- 1 pre-made pie crust (or if you have a recipe)
- 1/3 yellow onion, diced
- 3 tsp garlic powder
- 2 tsp red pepper flakes
- 6 large eggs
- 1/3 cup of milk
- pepper (optional)
Beat eggs, milk, and seasonings together and set aside. Chop the onion and tomatoes.
Mixed diced onion into the egg mixture and pour over the pie crust. Drop tomatoes & goat cheese on top. Sprinkle with pepper (optional).
Bake at 350 degrees for about 45 minutes, or until pie crust is lightly browned.
And most importantly: ENJOY! I cannot wait to eat this tomorrow morning! It looks and smells fantastic and was super easy to make. Some of the best recipes are spur of the moment.
