This weekends indulging had to be followed by a better food recovery. We went a little overboard and the goodies (well worth it) so my suggestion of salads for dinner was definitely agreed with!
I first seasoned two chicken breasts with BBQ sauce (some last-minute party store sauce), red pepper flakes, and chili powder.
I then baked the chicken at 350 degrees for about an hour. The smell coming from our kitchen was so delicious!
I served the chicken sliced atop a bed of lettuce along with onion, goat cheese, pepperoncini, black beans, and tomatoes. A little drizzle of light ranch paired perfectly 🙂
