Here comes another installment of “let’s throw things in a pan and see what happens.” Spoiler alert: success!
After a long day at work I wanted nothing more than a big bowl of pasta. (and some kitty snuggles) 🙂
Kale & Yellow Squash Pasta
- 1-Box of penne noodles
- 1-small/medium yellow squash
- 1-12 oz can of chopped Kale
- 1/2-red onion, diced
- 3-cloves of garlic, diced
- 1-28 oz can diced tomatoes
- 2-tbsp Italian seasoning
- 2-tsp red pepper flakes
- Olive oil and Parmesan cheese, amount preferred
Saute squash, kale, garlic and onion with a little bit of olive oil until they are soft, and onions are translucent.
Add in tomatoes and seasoning. Simmer for 1/2 hour.
Prepare noodles according to package. Add to sauce and add enough olive oil and cheese to your own personal preference.
