Kale & Yellow Squash Pasta

Here comes another installment of “let’s throw things in a pan and see what happens.” Spoiler alert: success!

After a long day at work I wanted nothing more than a big bowl of pasta. (and some kitty snuggles) 🙂

Kale & Yellow Squash Pasta

INGREDIENTS:

  • 1-Box of penne noodles
  • 1-small/medium yellow squash
  • 1-12 oz can of chopped Kale
  • 1/2-red onion, diced
  • 3-cloves of garlic, diced
  • 1-28 oz can diced tomatoes
  • 2-tbsp Italian seasoning
  • 2-tsp red pepper flakes
  • Olive oil and Parmesan cheese, amount preferred

STEP ONE:

Saute squash, kale, garlic and onion with a little bit of olive oil until they are soft, and onions are translucent.

STEP TWO:

Add in tomatoes and seasoning. Simmer for 1/2 hour.

STEP THREE:

Prepare noodles according to package. Add to sauce and add enough olive oil and cheese to your own personal preference.
