Ah, Monday-we meet again. Not enough motivation to make up something extravagant, but still in the mood for a good home cooked meal…
Leftover chicken to the rescue!
This meal is perfect to make using pre-cooked leftover chicken, or even a rotisserie chicken from a local supermarket. Easy to throw on the stove after a long day or when you just don’t feel like making a huge meal.
The mix of mango salsa and jalapenos creates a good balance of sweet and spicy.
4-5 chicken breasts/thighs already cooked, shredded.
1 pkg chicken taco seasoning.
2 red bell peppers, diced.
1 small can of diced jalapenos
1/2 cup of mango salsa
Begin by stirring all of the ingredients together in a medium pot. Let it simmer on a low heat for about an hour and a half covered, stir occasionally.
I enjoy them topped with shredded cheese and sour cream (of course), but these chicken tacos taste good with pretty much any topping!
